Loving the cold.
Going into the cold season always feels so much more dramatic to me than going into any other season. I’m going to be pissed if global warming doesn’t get its shit together. This is my favorite time of year to cook, I get cold easily and I am always guaranteed warmth while cooking. That said, I dusted off the slow cooker yesterday. I had some sweet potatoes and a butternut squash pestering me to be eaten so I scrounged around my 10 million cookbooks and pieced this simple yet fantastic meal together. Let’s call it Pestering Butternut squash & Sweet Potato soup, shall we? I like that word Pestering, PESTERING!
Pestering Butternut squash & Sweet Potato soup!
1 4-6qt Crockpot
1 medium onion diced (I had red on hand but yellow would work too)
1 medium to large Butternut squash peeled, seeded, and diced
2 medium sweet potatoes peeled and diced
4 cups of broth
1 tsp thyme (if all you have is the powder use about 1/2 tsp)
1/2 tsp dried sage
salt to taste
Oil for cooking onions

Heat your oil in a skillet over medium heat. Add your onion and cook until translucent and soft.
Transfer the onion to your crock-pot. Add everything else and give it all a good stir. Cover and cook on the low setting for 6 hours. Bask in the smell all day. If you have an immersion blender go ahead and puree the soup right in the stockpot, otherwise transfer the soup in batches to a blender or processor and remind yourself to buy an immersion blender. Garnish soup with croƻtons, or a dollop or sour cream as I did.

This soup is seriously fantastic, seriously. It’s rich, filling, REALLY good for you, low in fat….so good.
