Still snowing….

Battening down the surrounding trees…

Well hopefully anyway. We are due for a windstorm and I don’t know if you were hanging around with me 2 years ago (on my old defunct blog), but we had a terrible windstorm right before Christmas that knocked power out all over the area for days, as in 9 days for us, more or less for others. So I sit here wearily eying the trees out back. We had the scary leaning trees taken down, but somehow that only comforts me slightly. One glimmer of hope is how very wrong our weather forecasters seem to be around here. I have a bunch of family coming in the next few days too…sigh. I wouldn’t trade the trees, but I sure wish they would stay put….

Winsome Mundanity

Jodi over at SoNotCool makes these fascinating, lovely little movies almost daily. She has inspired me to break out the video-cam and film my own little snippets. I sort of wax and wane on whether they are fitting here, but today I decided screw it. I figure if you don’t like it you don’t have to look, right? They also pose for nice filler, which this blog seriously needs (my god I am not cut out for this).

Cranberry Orange Agave Bread

Last year I shared a similar cranberry orange bread, I have since refined it to something I find much more appealing…thought you might like to partake:

Cranberry Orange Agave Bread

Preheat your oven to 300˚F (FYI: Agave behaves much better in lower temps)

1/4 cup orange Juice
1/4 cup safflower oil
3/4 cup light agave nectar
1 tsp vanilla extract
1/2 tsp orange flavor
2 cups all-purpose flour (or Bob’s redmill GF AP flour mix + 1 tbls of ground flax or appropriate amount of xanthum gum)
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp all-spice
1 cup fresh cranberries (I used frozen)

In a big bowl mix orange juice, oil, agave, orange flavor, and vanilla. Sift in flour, baking powder, baking soda, salt, and all-spice. Stir Until smooth a few lumps are alright. Fold in cranberries. Don’t worry, the batter is supposed to be thick. Spoon batter into a greased loaf pan. Spread out and bake for one hour (do the toothpick test if you would like, but the cranberries can make it misleading). Let the bread cool for 15 minutes before inverting onto a cooling rack.

I took this a step further and added orange icing which does add sugar, but makes it all the better considering this bread isn’t terribly sweet on it’s own.

1/2 cup sifted confectioner’s sugar
1 tbls margarine
1/2 tsp orange flavor
2 tsp orange juice
1 tsp rice milk

In a smallish bowl, mix the sugar with the margarine with a fork until it forms crumbs. Mix all the other ingredients in a small bowl and drizzle into the sugar mixture until combined and smooth. Drizzle over bread.
